Recipe || Smoothie Bowl

Please tell me that I’m not the only one who needs incentives to get my to-do list accomplished? I’m trying to learn to pace myself in the middle of being productive and to create little bright pockets in the middle of long work days where I can let creativity flow and excite my tastebuds while I’m at it.

I’m amused about how much of the time my incentives are related to food or drinks. I recently bought a box of Outshine Fruit Bars and I keep them in my freezer, only allowing myself to have one on days where I run. See? It forces me to get out there and run because I know that later on that day, I can have one of those popsicles.

Over lunch time today, I experimented with something that I’ve been wanting to try.

Smoothie Bowl:

2 cups frozen strawberries
1 cup frozen pineapple
2 frozen bananas
3 fresh figs
1 six ounce can of pineapple juice
1 cup coconut cream
1 tsp. coconut flavoring

Blend in a blender, pour into bowls and top with whatever you like. I chose figs, coconut flakes, sunflower seeds, and mini chocolate chips because that’s what I happened to have on hand today.

Here’s to a happy, healthy and productive Tuesday! -Gretta
